The Farm With our ongoing dedication to the Slow Food Movement, and our goal to provide fresh, local ingredients, the Excelsior Inn and Ristorante is excited to announce the formation of the Excelsior Farm! Chef and Owner Maurizio Paparo has transformed five acres into a lush farm full of organic produce, and fresh eggs from his chicken coop. Our farm-fresh ingredients will now be offered at the Excelsior, as well as our partner businesses, Brindiamo Catering and Ciao Pizza. Buon Appetito!

History
Last fall Maurizio Paparo decided to put into action a plan he'd been thinking about for years, to turn his little used five acre front pasture into a lush farm to supply his restaurant, the Excelsior, with fresh organic produce and eggs. Maurizio bought a new John Deere tractor and started hauling and spreading tons of composted horse manure from his wife Dana's horse facility, building an eight foot deer fence, and he hired contractors to build a big beautiful barn and the "chicken palace". The next step was to hire Angela Andre, a 30 year veteran of organic market farming, to set up and run the farm. Angela threw herself into the project, creating a farm plan, designing and building a 20' x 75' greenhouse, starting seeds for a winter crop, planting garlic, tilling and cover cropping, and setting up a system to compost the restaurant food waste. By the end of February the farm brought it's first harvest of fresh organic produce to the Excelsior, and has been making weekly deliveries ever since.
